  6. Ensure that all foreseeable shortages are brought to the attention of the Senior Sous chef, before items run out.

  7. Ensure that all food is dated, wrapped and labelled on a daily basis

  8. Ensure that all food is kept in cleaned containers and that they are changed daily

  9. Ensure that sections are cleaned on a daily basis, as well as fridge and freezer

  10. Ensure that all bulk foods are processed, portioned, sealed, date stamped and packed away correctly in their relevant areas

  11. Ensure that you are able to prepare dishes according to recipes

  12. Ensure that you can operate basic kitchen equipment, eg, chip frier, flat top, oven etc

  13. Ensure that you can cook & produce food with in the allocated time period set out by the Executive chef.

  14. Ensure that you can take care of the buffet via constantly monitoring the food, stirring, cleaning, replenishing the buffet

  15. Ensure that you wash & disinfect the kitchen, all work stations, prep stations, tools, knives & all other working equipment.

  16. Ensure all wastage is kept to a minimum and that wastage is recorded correctly.

Control and safety

  1. Implement all health and safety procedures and adhere to all control procedures laid down by the company according to HACCP standards.

  2. Exercise safely and be fully conversant with fire and emergency procedures and use of fire fighting equipment and fire exits.

  3. Efficiently utilize stocks in order to achieve required Gross Profit margins.

  4. Always clean and sanitise your work surfaces at all times.
