Overview
- Oversee all deboning operations to ensure product quality, cost control, and maximum yield. Lead the production team, maintain equipment and safety standards, and report on performance metrics. Ideally from the meat or food production industry. Butchery or blockman experience advantageous.
Key Responsibilities
- Manage and supervise the deboning team to meet daily production and quality targets.
- Monitor product quality, yield, and waste; implement continuous improvement measures.
- Oversee daily operations, equipment maintenance, and food safety compliance.
- Track and report key KPIs, production volumes, and efficiency to management.
- Maintain accurate production records and ensure audit readiness at all times.
- Control running costs and maintain factory inventory.
- Schedule staff rosters, holidays, and overtime in line with labour requirements.
- Enforce HACCP, GMP, Health & Safety, and quality assurance standards.
- Conduct staff performance reviews, identify training needs, and deliver SOP training.
- Participate in operations meetings and contribute to process improvement.
- Ensure customer quality expectations are consistently met or exceeded.
EXPERIENCE
- Minimum 5 years in a high-volume, short shelf-life chilled production environment.
- Proven people management experience in a unionized setting.
- Knowledge of meat processing, waste management, and hygiene practices.
- Butchery or blockman experience advantageous.
QUALIFICATIONS
- Certificate or Diploma in Production Management (or equivalent).

KEY RESPONSIBILITIES
Production & Quality
- Oversee daily kitchen operations to ensure output, quality, and consistency.
- Monitor and uphold food safety and hygiene protocols.
- Plan and manage production schedules according to seasonality of fruit.
- Maintain close attention to detail across recipes, labeling, and final product quality.
- Support with new product development.
Operations & Procurement
- Manage procurement of fruit, jars, and supplies; liaise with suppliers.
- Track stock and inventory, ensuring accurate records in Excel and accounting systems.
- Coordinate market refills and occasional deliveries.
- Optimize workflow, resources, and costs
Team Leadership
- Motivate, guide, and uplift a growing team of women.

- Provide training and feedback while ensuring high performance standards.
Client & Brand Engagement
- Occasionally represent the brand at weekend markets (selling directly to customers).
